Chilli Oil : A Historical Spice Odyssey

Chili oil, known as "là jiāo yóu" in Mandarin, is believed to have originated in the Sichuan province during the Qing Dynasty (17th to 19th centuries). Sichuan cuisine, renowned for its bold and spicy flavors, played a pivotal role in popularizing chilli  oil.

But the story of chilli oil began thousands of years ago in ancient China. Archaeological evidence suggests that chillies were first cultivated in Mexico as early as 3500 BCE. However, it was the introduction of chilli peppers from the Americas during the late Ming Dynasty (14th to 17th centuries) that marked a significant turning point in Chinese cuisine. Initially used for medicinal purposes, chilli peppers soon found their way into Chinese kitchens, where they were used in pickling and fermenting.
