Ingredients

2 ripe bananas
- 1/4 cup khandsari sugar
- 2 tablespoons flax meal
- 2 tablespoons chia seeds
- 1 teaspoon cinnamon powder
- 2 cups soy milk
- 2 cups rolled oats
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 100g pecans, chopped
- Sliced banana (for topping)
- Chopped pecans (for topping)
- Yogurt (for serving)
Directions
In a baking dish, mash the bananas with khandsari sugar until smooth and pulpy.
- Add flax meal, chia seeds, cinnamon powder, and soy milk. Stir well to combine.
- Mix in rolled oats, baking powder, salt, and chopped pecans. Ensure everything is well incorporated and the surface is even. Arrange sliced banana on top, followed by additional chopped pecans.
- Preheat the oven to 170°C and bake for 60 minutes.
- Once baked, let it cool for 30 minutes. Slice into six equal portions and transfer to serving plates.
