Believe it or not, tofu has been around for over 2,000 years! Legend has it that tofu was accidentally discovered by a Chinese prince, while concocting an immortality elixir, marking the beginning of its culinary journey. While eternal life still remains unattained, it turns out, tofu is the next best thing to never ending existence- healthy, versatile, and delicious!

Tofu is essentially soybean curd. It is made by curdling soy milk and then pressing the resulting curds into solid blocks. Tofu comes in various textures, from soft and silken to firm and extra-firm, making it truly versatile. Since tofu has little inherent flavour, it acts as  a flavour sponge, absorbing all the deliciousness of whatever you cook it with.                                                       COOKING

1. Pressing: Pressing tofu removes excess moisture, resulting in firmer tofu that holds its shape beautifully during cooking.

2. Marinating: Marinating tofu in your favorite flavours infuses it with deliciousness, adding depth and complexity to any dish.

3. Freezing: Freezing tofu makes it more porous, allowing it to absorb flavours more readily and crumble effortlessly.

STORING

1. Unopened: Refrigerate or store in pantry (if shelf-stable).
2. Opened: Submerge in water in the fridge (firm/extra-firm). Wrap tightly (soft/silken). Change water daily.
3. Leftovers: Refrigerate in a sealed container for up to 3 days.
4. Freezing: Freeze firm tofu for up to 3 months. Thaw in the fridge.
5. Discard If you experience off-odor or sliminess.
