Ingredients

1/4 cup dried blue pea flowers (or blue pea tea)
- 2 cups hot water (for tea)
- 2 tablespoons gum katira (tragacanth gum)
- 2 cups warm water (for soaking katira)
- 3–4 tablespoons soaked gum katira
- 1 tablespoon khandsari sugar (or to taste)
- 1 tablespoon fresh lemon juice
- A handful of fresh mint leaves
- Ice cubes
- Crushed blue pea tea ice (from prepared tea)
- Soda water, to top up
Directions
Make the Blue Pea Tea Ice
In a glass container, steep 1/4 cup of blue pea tea in 2 cups of hot water.
- Let it sit for 30 minutes until the color is deep and vibrant.
- Once ready, pour the tea into an ice cube tray and freeze completely.
- Once frozen, transfer the cubes into a zip-lock bag, wrap in a kitchen towel, and gently crush using a rolling pin.
Prepare the Gum Katira
In a medium bowl, soak 2 tablespoons of gum katira in 2 cups of warm water.
- Let it soak for 3 hours until fully expanded and jelly-like.
- Stir gently to fluff it up and set aside.
Assembling the Cooler
- 1. In a serving glass, add:
- A few fresh mint leaves
- 1 tablespoon khandsari sugar (adjust to taste)
- 3–4 tablespoons of prepared gum katira
- A few regular ice cubes
- 1 tablespoon lemon juice
- A generous spoonful of crushed blue pea tea ice
