1 tablespoon Rice Vinegar
-
1 teaspoon Sugar
-
1 cup Warm Water
-
2 tablespoons chopped Green Onion
-
1 tablespoon Sesame Seeds
-
250g Soba Noodles
-
7–8 cups Ice Water
-
Shredded Nori Sheets (for garnish)
-
Additional Green Onion and Sesame Seeds (for garnish)
Directions
1. Prepare the Dipping Sauce:
In a mixing bowl, combine the vegetable broth powder, soy sauce, rice vinegar, sugar, and
warm water. Stir until the sugar fully dissolves.
Add Flavor:
Mix in the chopped green onion and sesame seeds, then refrigerate the sauce while preparing
the noodles.
Cook the Soba Noodles:
Fill a pot with enough water to fully submerge the noodles and bring it to a gentle boil over
medium heat. Add the soba noodles and cook until tender, following the package instructions.
Cool the Noodles:
Once cooked, drain the noodles using a strainer and immediately transfer them into a bowl of
ice water. Let them sit for 2–3 minutes, then drain well.
5. Assemble and Serve:
Place the drained noodles on a serving plate. Garnish with shredded nori sheets, additional
green onion, and sesame seeds.
6. Enjoy:
Dip the noodles into the chilled dipping sauce and enjoy your refreshing cold soba!
