Ingredients
Dry Ingredients:
- 1 ½ cups corn flour
- ¾ cup all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ¼ cup brown sugar
- ¼ cup caster sugar
Wet Ingredients:
- 2 cups soy milk
- 1 tablespoon lemon juice
- ¼ cup extra virgin olive oil
For Serving:
- Butter (or a vegan alternative)
- Agave syrup
Directions
Preheat and Prepare
Preheat your oven to 160°C (320°F). Grease a baking dish and set it aside.
Combine Dry Ingredients:
In a large mixing bowl, add the corn flour, all-purpose flour, baking powder, salt, brown sugar, and caster sugar. Whisk everything together until they are well combined and free of lumps
Add Wet Ingredients:
Pour the soy milk, lemon juice, and extra virgin olive oil into the bowl with the dry ingredients.
Mix the Batter
Mix well with a spatula or wooden spoon until the batter is smooth and there are no dry spots.
Bake:
Pour the batter into your prepared greased baking dish and spread it out evenly. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean
Cool and Serve:
Once baked, remove the cornbread from the oven and let it cool in the dish for at least 15-20 minutes. This will help it set and make slicing easier.
