Goeey Pecan Pie Bars

Ingredients
For the Crust:

200g all-purpose flour

1/4 cup caster sugar

1/2 teaspoon salt

1/2 cup butter, softened
-
1/2 teaspoon vanilla extract
For the Filling:
-
1/2 cup coconut cream
-
1/2 cup agave syrup
-
1/2 cup brown sugar
-
3 tablespoons cornstarch
-
1 teaspoon vanilla extract
-
1 teaspoon cinnamon powder
-
1/2 teaspoon salt

1 cup pecans, chopped
Directions
1. Prepare the Crust:
Preheat the oven to 175°C (350°F).
In a large mixing bowl, whisk together the flour, caster sugar, and salt.
Add the butter and vanilla extract, then mix with a spatula until the mixture turns clumpy.
Transfer to a parchment-lined baking sheet and spread evenly.
Press firmly with the back of a spoon or fork to form a solid base.
Bake for 15 minutes.
2. Prepare the Filling:
While the crust is baking, chop the pecans into smaller pieces.
In a medium mixing bowl, combine coconut cream, agave syrup, brown sugar, cornstarch, vanilla extract, cinnamon powder, and salt. Mix well.
Stir in the chopped pecans and mix again.
3. Assemble and Bake:
Once the crust is baked, remove it from the oven and evenly pour the pecan mixture over the top.
Spread it out evenly using a spatula.
Bake at 175°C (350°F) for 25 minutes.
Cool and Serve:
Remove from the oven and let it cool for 10-15 minutes.
Cut into equal bars and serve.
