Gond Ki Raab is a traditional, nourishing Indian preparation known for its comforting warmth and rich flavour. Made with ghee-roasted acacia gum crystals, wheat flour, and fragrant whole spices like cinnamon and cloves, this wholesome dish has a smooth, porridge-like consistency. Ingredients

2 tbsp Ghee

1 tbsp Acacia Gum Crystals

1 pc Cinnamon Stick (roughly broken)

3-4 pcs Cloves

2 tbsp Wheat Flour

2 tbsp Khandsari Sugar

2 1⁄2 cups Water

1 tbsp Powdered Nuts

2 tsp Slivered Almonds
-
2 tsp Sliced Pistachios
Directions
Heat 1 tbsp of ghee in a pan and roast the Acacia Gum Crystals until they all puff up, and set aside.
With the remaining ghee in a kadai, saute the spices until fragrant, and add in the wheat flour.
Roast the flour until it turns a light golden brown.
Add in the water and cook until it thickens.
Sprinkle in the puffed Acacia Gum Crystals, along with the Khandsari Sugar, and mix well.
Lastly, add in the nut powder and let it cook for 2-3 minutes.
Pour into serving bowls of choice, garnish with the slivered almonds, pistachios, and rose petals.
Serve warm
