Grilled Plant-Based Mayonnaise Sandwich

Crispy on the outside and creamy on the inside, this Grilled Plant-Based Mayonnaise Sandwich is a delicious, guilt-free comfort snack. Finely chopped bell peppers, sweet corn, red onion, and spring onion are mixed with smooth plant-based mayonnaise to create a rich, flavourful filling. The mixture is spread between slices of bread and grilled in butter until perfectly golden and crunchy. Served hot and sliced in half, the sandwich pairs beautifully with a spicy-sweet dipping sauce made from plant-based mayonnaise and gochujang. Ideal for quick breakfasts, evening snacks, or light meals, this sandwich delivers great taste with a satisfying plant-based twist.

Ingredients
1⁄2 Red Bell Pepper (finely chopped)
1⁄2 Yellow Bell Pepper (finely chopped)
50g Sweet Corn
1 Red Onion (finely chopped)
2 tsp Spring Onion (finely chopped)
3-4 tbsp Plant-Based Mayonnaise
6 Bread Slices
1-2 tsp Butter

2-3 tsp Plant-Based Mayonnaise
1 1⁄2 tsp Gochujang Dipping Sauce
Directions
In a bowl, mix together the vegetables, along with the Mayonnaise.
Spoon a dollop onto a slice of bread, spread evenly, and sandwich shut.
Grease a pan with butter, and cook the sandwich until both sides are golden brown and crispy.
Slice in half and transfer to a serving plate.
For the dipping sauce, mix together the Mayonnaise and the Gochujang Sauce well.
Serve alongside the sandwiches.
