Ingredients

12 to 15 small to medium-sized potatoes
- 2 tablespoons salt
- Water (enough to cover the potatoes)
- 2 tablespoons idli podi powder
- 2 garlic cloves, minced
- 1/4 cup olive oil
- Freshly chopped cilantro
- Favorite sauce for dipping
Directions
1. Boil potatoes in salted water until tender.
- 2. Mix idli podi, minced garlic, and olive oil in a bowl.
- 3. Drain and place boiled potatoes on a baking sheet.
- 4. Flatten potatoes with a glass/mug and coat with the podi mixture on both sides.
- 5. Bake at 230°C (450°F) for 50–60 minutes, flipping halfway.
- 6. Garnish with cilantro and serve with your favorite dipping sauce.
