Home Made Chilli Oil

Ingredients

1 cup neutral oil
- 1 cinnamon stick
- 1 bay leaf
- 1 tablespoon Sichuan peppercorns
- 2 onions, sliced
- ½ cup chopped garlic
- 80g gochugaru (Korean chili flakes)
- 1 tablespoon tamari (or soy sauce)
- 1 tablespoon sugar
- 1 teaspoon salt
Directions
1. Heat a pan over low heat and add the oil.
- 2. Add the cinnamon stick, bay leaf, Sichuan peppercorns, and sliced onions. 3. Cook for 15 minutes, stirring occasionally, to infuse the flavors.
- 4. Strain the oil and discard the spices and onions.
- 5. Return the infused oil to the pan over medium heat.
- 6. Add the chopped garlic and stir-cook for 5 minutes until golden brown.
- 7. Stir in the gochugaru, tamari, sugar, and salt.
