Matcha Chia Seed Pudding is a nourishing, visually stunning dessert or breakfast option packed with flavour and texture. Creamy coconut milk and chia seeds form a rich, pudding-like base, infused with earthy matcha for a vibrant green hue. Naturally sweetened and layered in ombré shades, this pudding is topped with juicy strawberries tossed in coconut sugar and fresh mint for a refreshing contrast. Finished with crunchy coconut chips and mint sprigs, it’s a wholesome yet indulgent treat that works perfectly as a make-ahead breakfast, light dessert, or anytime snack for matcha lovers.
Ingredients

8 tbsp Chia Seeds

400ml Coconut Milk

3 tsp Matcha Powder

2-3 tsp Sweetener (of choice)

200g Strawberries (chopped)

8-10 Mint Leaves (finely sliced)

2 tsp Coconut Chips (for garnish)

2-3 Mint Sprigs (for garnish)
Directions
In a large bowl, mix together the Chia Seeds and the Coconut Milk.
Set it in the fridge for 3-4 hours, or overnight.
Remove from the fridge, and divide the Chia Coconut mix into two portions.
In a medium sized bowl, add in the chopped strawberries, coconut sugar and mint leaves, and mix well. Set aside.
Add 1 tsp of the Matcha Powder, and mix well with one portion.
Repeat the same process with the remaining Matcha Powder and the second bowl of the Chia Coconut mix.
Layer the Matcha & Chia seed mix, from darker to lighter into glasses of choice.
Spoon the macerated strawberries over the Matcha Chia mix.
Garnish with the coconut chips and mint sprigs, and serve immediately.
