Palak Paneer W/ Tofu

A healthy twist on the classic, Palak Paneer with Tofu swaps traditional paneer for tofu, creating a creamy, flavorful dish packed with spinach and aromatic spices. Tofu absorbs the rich, garlicky spinach gravy, making it a protein-packed, plant-based alternative that’s as satisfying as it is delicious. Serve it with roti or rice for a wholesome, comforting meal!

Ingredients
For Air-Fried Tofu:
- 400g tofu, cubed
- 1 tablespoon oil
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon cumin powder
- 1/4 teaspoon coriander powder
- 1/4 teaspoon red chili powder
- 1/4 teaspoon salt
- For the Spinach Base:
- 1 teaspoon oil
- 1 teaspoon cumin seeds
- 1 onion, chopped
- 2 garlic cloves, chopped
- 2 green chilies, sliced
- 3 tomatoes, chopped
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon amchur powder
- 1/2 teaspoon salt
- 400g spinach
- 1/2 cup water
- 1/2 cup coconut cream
Directions
- Step 1: Air Fry the Tofu
Cut the tofu into bite-sized cubes.
In a mixing bowl, combine the tofu, oil, turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Toss well to evenly coat the tofu with the spices.
Transfer to an air fryer and cook at 180°C (350°F) for 15 minutes, or until golden and slightly crispy. Set aside.
- Step 2: Prepare the Spinach Base
Heat oil in a pan over medium heat. Add cumin seeds and let them splutter for about 1 minute.
Add the chopped onion, garlic, and green chilies. Sauté for 2–3 minutes until the onion turns translucent.
Stir in the tomatoes, turmeric powder, coriander powder, cumin powder, red chili powder, amchur powder, and salt. Mix well and cook for another 2–3 minutes.
Add the spinach and stir to combine. Cover the pan and cook for 5 minutes.
Turn off the heat and allow the mixture to cool for 5–10 minutes.
Transfer to a blender and blend until smooth and creamy.
- Step 3: Assemble the Dish
Pour the blended spinach mixture back into the pan and add 1/2 cup of water. Stir to combine.
Add the air-fried tofu and gently mix.
Pour in the coconut cream and stir well.
