Prune and Kaju Barfi Roll is a wholesome, no-fuss sweet that blends natural richness with festive flair. Ingredients

280g Chilean Prunes

40g Almonds (roughly chopped)

40g Cashew Kernels (roughly chopped)

20g Pistachios (roughly chopped)

2 tbsp Oil

100g White Poppy Seeds
Directions
In a pan, add 1 tbsp of oil and toast the chopped nuts until they turn a light golden brown, and set aside.
In a blender, blitz the Chilean Prunes until it forms a paste, and cook on a medium to low heat with the remaining oil until they have softened.
Add in the toasted nuts and mix well until everything is combined well.
Allow to cool for 2-5 minutes until slightly warm, and then place onto a sheet of cling-wrap, and roll until an even log shape forms.
Place in the fridge to firm up for 30-45 minutes.
Once firm, coat well with the poppy seeds.
Slice into half inch circles, and serve immediately.
