Sabudana Vada

Sabudana Vada is a beloved Indian snack, especially popular during fasting days and festive occasions. Made with soaked sabudana, mashed potatoes, crunchy peanuts, and fragrant curry leaves, these vadas are seasoned with green chillies and cumin for gentle heat and aroma. Shaped into patties and deep-fried until golden and crisp on the outside, they remain soft and fluffy inside. Garnished with fried green chillies and curry leaves, Sabudana Vada is best enjoyed hot with chutney or curd, offering comfort, texture, and classic flavour in every bite.
Ingredients

240g Sabudana (soaked in water for 2-3 hours)

3-4 Potatoes (boiled, and cut into chunks)

10-12 Curry Leaves (roughly torn)

3 tbsp Peanuts (toasted, and roughly crushed)

2 tsp Green Chillies (chopped)

1 tsp Cumin Powder

1 litre Oil

3-4 Green Chillies (fried, for garnish)

5-6 Curry Leaves (fried, for garnish)
Directions
In a large plate, mix together the sabudana, potatoes, green chillies and peanuts, until the mixture is able to hold its shape.
Make rounds, and flatten into patties.
In a large kadai, heat the oil to deep fry the sabudana patties.
Fry until golden brown and crispy on both sides.
Remove, and place on a plate lined with tissue, to soak up any excess oil.
Place onto a serving platter, garnish with the fried chillies and curry leaves, and enjoy!
