Soba Noodle Dashi Ramen

Soba Noodle Dashi Ramen is a light and comforting Japanese-style noodle dish made with earthy soba noodles and a gently infused dashi broth. Kombu and shiitake mushrooms are simmered with spring onions to create a naturally umami-rich base, without overpowering flavours. The cooked soba noodles are added to the warm broth and finished with spring onion curls and a mix of black and white sesame seeds for added texture and aroma. Simple to prepare and soothing to enjoy, this recipe is perfect for a quick, wholesome meal that feels light yet satisfying.
Ingredients

250g Soba Noodles

1 pc Kombu (torn in half)

2 pcs Shiitake Mushrooms

2 tsp Spring Onion (only the white part, finely sliced)

1 tsp Spring Onion Curls (for garnish)

1 tsp Black and White Sesame Seeds
Directions
Fill a pot halfway with water, and bring to a boil.
Add in the Soba Noodles and cook as per packet instructions.
Remove the noodles and drain the water from the pot, and drizzle with a bit of oil to prevent sticking.
In the same pot, fill halfway with water again, add the spring onions, shiitake mushrooms and the kombu sheets, and bring to a gentle boil.
Allow to simmer for 2-5 minutes. Once done, cover with a lid and let it steep for 10-15 minutes.
Add the noodles to a serving bowl of choice, and pour the broth gently over the noodles until the bowl is half full.
Garnish with the spring onion curls, and sesame seeds, and serve hot.
