Spiced Prune Chutney

1. In a pan, combine prunes, jaggery, red chili powder, fennel powder, ginger powder, salt, black salt, amchur, rice vinegar, and water.
- 2. Turn on the heat to medium and mix well to ensure the spices are combined.
- 3. Cover the pan and let the mixture cook for 10 minutes until the prunes soften. 4. Remove the cover and use a silicone spatula to gently mix and mash the prunes until they become pulpy and the liquid evaporates.
