Spiced Prune Chutney

Ingredients
2 cups pitted prunes
- 1 cup jaggery
- 1 tablespoon red chili powder
- 1 teaspoon fennel powder
- 1 teaspoon ginger powder
- ½ teaspoon salt
- ½ teaspoon black salt
- 2 tablespoons amchur (dried mango powder)
- 2 tablespoons rice vinegar
- 2 cups water
Directions
In a pan, combine prunes, jaggery, red chili powder, fennel powder, ginger powder, salt, black salt, amchur, rice vinegar, and water.
Turn on the heat to medium and mix well to ensure the spices are combined.
Cover the pan and let the mixture cook for 10 minutes until the prunes soften. 4. Remove the cover and use a silicone spatula to gently mix and mash the prunes until they become pulpy and the liquid evaporates.
