These delightful bites are the perfect combination of a satisfyingly chewy texture and a vibrant, spicy sauce. Ingredients
For the Potato Bites:
- 2 medium potatoes, boiled and peeled
- 1 cup tapioca flour
- 1 teaspoon salt
- ⅓ cup water, approximately
For the Spicy Sauce:
- 1 tablespoon chili oil
- 1 tablespoon rice vinegar
- 1 tablespoon light soy sauce
- 1 tablespoon toasted sesame oil
- 3 cloves garlic, finely chopped
- 1 teaspoon grated ginger
- 1 tablespoon agave syrup
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- Fresh cilantro, chopped, for garnish
Directions
Prepare the Spicy Sauce:
In a large mixing bowl, combine the chili oil, rice vinegar, light soy sauce, toasted sesame oil, chopped garlic, grated ginger, agave syrup, ¼ teaspoon of salt, and ¼ teaspoon of pepper. Mix everything together thoroughly and set the bowl aside.
Make the Potato Dough
In a separate bowl, grate the 2 boiled potatoes.
- To the grated potatoes, add 1 teaspoon of salt and 1 cup of tapioca flour.
- Begin to knead the mixture with your hands, gradually adding the ⅓ cup of water. Continue kneading until a smooth, pliable dough is formed.
Shape the Potato Bites:
Scoop about 2 tablespoons of the dough and roll it into a small disc in the palm of your hand.
- Take a clean bottle with a standard-sized mouth and press it gently into the center of the disc to create a circular indentation, making it resemble a button mushroom.
- Repeat this process with the remaining dough.
Cook the Potato Bites:
Bring a pot of water to a simmer.
- Carefully place the shaped potato bites into the simmering water.
- Cook for approximately 5 minutes, or until they are cooked through and begin to float to the surface.
Assemble and Serve:
Using a slotted spoon, strain the cooked potato bites directly from the pot into the bowl with the prepared spicy sauce.
- Add a generous amount of fresh, chopped cilantro.
- Gently toss everything together to ensure each potato bite is well-coated with the sauce.
