Black Garlic Risotto is a rich and elegant dish that combines creamy comfort with deep, savoury flavour. Arborio rice is slowly cooked in stock until perfectly tender, creating the signature velvety texture of classic risotto. Finely chopped black garlic adds a unique sweet-umami depth, beautifully complemented by sautéed onions, buttery mushrooms, and fresh cream. Finished with parmesan cheese, parsley, and rosemary, this risotto is indulgent yet balanced, making it ideal for special dinners or gourmet home meals. 3 tbsp Butter

6-8 Black Garlic (finely chopped)

1 Onion (minced)

1⁄2 cup Brined Button Mushroom (cut into half)

400 ml Stock

1⁄2 cup Arborio Rice

1 tsp Salt

1⁄3 cup Fresh Cream

1 tbsp Parmesan cheese

2 tbsp Parsley (finely chopped)

Rosemary (for garnish)
Directions
Heat oil in a pan, saute Brined Button Mushroom for 4-5 minutes and keep it aside.
Now heat butter in a pan, add Black Garlic and saute for a minute.
Add onion and cook for 2 minutes.
Add Arborio Rice and keep stirring for 2-3 minutes.
Add stock water in batches, and constantly stir until it has been absorbed, and then repeat until the arborio rice is cooked. This process can take anywhere from 25 to 40 minutes.
Stir in cream, parmesan cheese, salt, black pepper powder and cook for 2 to 3 minutes more.
Garnish and it's ready to serve.
