Butterfly pea flowers are steeped in hot water to release their beautiful blue hue, which is then blended into soft idli batter. 400g Idli Batter

10g Dried Butterfly Pea Flowers

200ml Hot Water
Directions
In a bowl, pour the hot water over the Dried Flowers, and allow them to soak for 2-3 minutes.
Remove the flowers and add the infused water to the batter, mixing until fully combined.
Pour the batter into greased moulds and cook for 4-5 minutes.
Serve hot with Coconut Chutney.
