Blue Pea Idli is a vibrant twist on the classic South Indian favourite, combining traditional comfort with natural colour. Butterfly pea flowers are steeped in hot water to release their beautiful blue hue, which is then blended into soft idli batter. Steamed until light, fluffy, and airy, these idlis are visually striking yet mild and comforting in flavour. Naturally coloured and simple to prepare, Blue Pea Idli makes a delightful breakfast or snack. Ingredients
400g Idli Batter
10g Dried Butterfly Pea Flowers
200ml Hot Water
Directions
In a bowl, pour the hot water over the Dried Flowers, and allow them to soak for 2-3 minutes.
Remove the flowers and add the infused water to the batter, mixing until fully combined.
Pour the batter into greased moulds and cook for 4-5 minutes.
Serve hot with Coconut Chutney.
