Mango Phirni

A creamy, fruity twist on the traditional Indian dessert, made with wholesome brown rice flour and sweet mango purée. Made using Brown Rice Flour this treat is sure to tantalise your tastebuds!

Ingredients
- ¼ cup brown rice flour
- ½ cup warm milk
- A pinch of saffron
- 4 cups milk of your choice
- ¼ cup almond meal
- ¼ cup sugar (adjust to taste)
- ½ teaspoon crushed cardamom
- 2 cups mango purée (fresh or canned)
- Mango slices and sliced pistachios (for garnish)
Directions
In a mixing bowl, combine brown rice flour, warm milk, and saffron. Whisk well and let it soak for 10 minutes.
- In a heavy-bottomed pot, heat 4 cups of milk over medium heat until hot but not boiling.
- Gradually add the soaked rice flour mixture to the hot milk, stirring continuously to avoid lumps.
- Add almond meal and continue to cook, stirring constantly, for 15 to 20 minutes or until the mixture thickens.
- Stir in sugar and crushed cardamom.
- Add mango purée and cook for another minute, stirring until everything is well combined.
- Remove from heat and allow the mixture to cool slightly.
- Transfer to a container, cover, and refrigerate for 2 to 3 hours until well chilled.
- Serve in small bowls topped with fresh mango slices and sliced pistachios.
