This quick and flavorful side dish comes together in minutes, transforming simple frozen corn into a savory and umami-rich treat. The combination of savory miso, rich butter, and bright citrus makes it an irresistible accompaniment to any meal.

Ingredients
2 tablespoons unsalted butter
2 cups frozen corn, thawed
3 cloves garlic, finely chopped
1 tablespoon aka miso (red miso)
1 tablespoon rice vinegar
1 tablespoon nori flakes (or crumbled roasted seaweed)
Handful of freshly chopped cilantro
Lemon juice, for squeezing
Directions
Sauté the Corn: Place a pan over medium heat and add the butter. Once the butter is melted and hot, add the thawed corn. Stir and sauté for 4 to 5 minutes, or until the corn begins to puff up slightly and becomes fragrant.
Add the Flavor Base: Add the chopped garlic, aka miso, and rice vinegar to the pan. Use a spatula to mix everything together thoroughly, ensuring the miso paste is fully incorporated and coats the corn evenly.
