Butter Miso Corn

Ingredients

  • 2 tablespoons unsalted butter

  • 2 cups frozen corn, thawed

  • 3 cloves garlic, finely chopped

  • 1 tablespoon aka miso (red miso)

  • 1 tablespoon rice vinegar

  • 1 tablespoon nori flakes (or crumbled roasted seaweed)

  • Handful of freshly chopped cilantro

  • Lemon juice, for squeezing

Directions

  1. Sauté the Corn: Place a pan over medium heat and add the butter. Once the butter is melted and hot, add the thawed corn. Stir and sauté for 4 to 5 minutes, or until the corn begins to puff up slightly and becomes fragrant.

  2. Add the Flavor Base: Add the chopped garlic, aka miso, and rice vinegar to the pan. Use a spatula to mix everything together thoroughly, ensuring the miso paste is fully incorporated and coats the corn evenly.

  3. Finishing Touches: Stir in the nori flakes and the freshly chopped cilantro. Continue to mix for another moment until just combined.

  4. Serve and Enjoy: Remove the pan from the heat and transfer the butter miso corn to a serving plate or platter. Finish with a generous squeeze of fresh lemon juice over the top and serve immediately.
