Chilled Peanut Noodles are a refreshing and flavourful meal featuring shirataki noodles tossed in a savoury peanut-inspired sauce with crisp vegetables. Urban Platter Shirataki Noodles are combined with cucumber, carrot, cabbage, peas, green onions, and fresh cilantro for a colourful and satisfying dish. The dressing brings together garlic, soy sauce, rice vinegar, toasted sesame oil, maple syrup, and simple seasonings for a balanced combination of savoury, nutty, tangy, and lightly sweet flavours. Chilling the noodles allows the ingredients to blend beautifully while keeping the dish refreshing. Finished with chopped peanuts and cilantro, these noodles make an easy light lunch or dinner.

2 cloves garlic, minced
1 tablespoon rice vinegar
3 tablespoons light Soy Sauce
2 tablespoons toasted Sesame Oil
1 tablespoon Maple Syrup
1/4 teaspoon salt
1/4 teaspoon Black Pepper

2 packets (approx. 200-225g or 7-8 oz each) Urban Platter's Shirataki Noodles (or your preferred brand)
1 medium cucumber, cut into thin strips
1 large carrot, julienned
1 cup sliced cabbage (green or purple, or a mix)
1/2 cup boiled peas (fresh or frozen, thawed)
2-3 green onions, thinly sliced
1/4 cup fresh cilantro, chopped (plus more for topping)
1/4 cup chopped peanuts, for topping
Directions
Prepare the Peanut Sauce: In a large mixing bowl, combine the minced garlic, rice vinegar, light soy sauce, toasted sesame oil, maple syrup, salt, and pepper. Whisk until well combined.
Prepare the Shirataki Noodles: Gently wash and rinse the shirataki noodles under cold running water for 1-2 minutes. Drain them well and transfer to the large mixing bowl with the peanut sauce.
Add Vegetables: To the bowl with the noodles and sauce, add the cucumber strips, julienned carrots, sliced cabbage, boiled peas, sliced green onions, and chopped cilantro.
Mix and Coat: Using tongs, gently toss all the ingredients together, ensuring the noodles and vegetables are evenly coated with the peanut sauce.
Chill: Cover the bowl and refrigerate for at least 30-40 minutes to allow the flavors to meld and the salad to chill.
Serve: Once chilled, plate the shirataki peanut noodles.
Garnish and Enjoy: Top with additional fresh cilantro and chopped peanuts before serving. Enjoy your delicious and refreshing chilled noodles!
