Noodles
Cold Soba Noodles are a refreshing Japanese-inspired dish featuring tender buckwheat noodles served chilled with a savoury dipping sauce. The sauce combines premium soy sauce, vegetable broth powder, rice vinegar, and a touch of sugar for a balanced blend of umami, tanginess, and subtle sweetness. Chopped green onions and sesame seeds add freshness and nutty flavour, while shredded nori provides a delicate seaweed finish. After cooking, the noodles are cooled in ice water to create a pleasantly firm texture. Easy to prepare and light to enjoy, these cold soba noodles make a delicious lunch or dinner, especially on warm days.

Ingredients
- ½ teaspoon Vegetable Bouillon and Broth Powder
- 2 tablespoons Premium Soy Sauce
- 1 tablespoon Rice Vinegar
- 1 teaspoon Sugar
- 1 cup Warm Water
- 2 tablespoons chopped Green Onion
- 1 tablespoon Sesame Seeds
- 250 g Soba Noodles
- 7–8 cups Ice Water
- Shredded Nori Sheets, (for garnish)
- Additional Green Onion and Sesame Seeds, (for garnish)
Directions
- Prepare the Dipping Sauce: In a mixing bowl, combine the vegetable broth powder, soy sauce, rice vinegar, sugar, and warm water. Stir until the sugar fully dissolves.
- Add Flavor: Mix in the chopped green onion and sesame seeds, then refrigerate the sauce while preparing the noodles.
- Cook the Soba Noodles: Fill a pot with enough water to fully submerge the noodles and bring it to a gentle boil over medium heat. Add the soba noodles and cook until tender, following the package instructions.
- Cool the Noodles: Once cooked, drain the noodles using a strainer and immediately transfer them into a bowl of ice water. Let them sit for 2–3 minutes, then drain well.
- Assemble and Serve: Place the drained noodles on a serving plate. Garnish with shredded nori sheets, additional green onion, and sesame seeds.
- Enjoy: Dip the noodles into the chilled dipping sauce and enjoy your refreshing cold soba!
