This Gochugaru Chili Oil is a bold and flavorful Korean-inspired condiment made with Korean red pepper flakes (gochugaru), garlic, and neutral oil. Ingredients
- 1 cup neutral oil
- 1 cinnamon stick
- 1 bay leaf

1 tbsp Sichuan peppercorns
- 2 onions, sliced
- ½ cup chopped garlic
- 80g gochugaru (Korean chili flakes)
- 1 tablespoon tamari (or soy sauce)
- 1 tablespoon sugar
- 1 teaspoon salt
Directions
- Heat a pan over low heat and add the oil.
Add the cinnamon stick, bay leaf, Sichuan peppercorns, and sliced onions. 3. Cook for 15 minutes, stirring occasionally, to infuse the flavors.
Strain the oil and discard the spices and onions.
Return the infused oil to the pan over medium heat.
Add the chopped garlic and stir-cook for 5 minutes until golden brown.
Stir in the gochugaru, tamari, sugar, and salt.
Cook for 2 more minutes, stirring continuously.
Remove from heat and let it cool completely.
Transfer to a container and enjoy with noodles, dumplings, or your favorite dishes!
