Makhana Kheer is a comforting and traditional Indian dessert known for its rich, creamy texture and delicate flavour. Roasted makhana (fox nuts) are simmered in warm milk until soft, while a portion of the makhana is ground to naturally thicken the kheer. Sweetened with condensed milk and infused with fragrant saffron, this dessert develops a luxurious taste and aroma. The addition of chopped mixed nuts adds a delightful crunch, while pistachios and dried rose petals create a beautiful garnish. Served warm or chilled, Makhana Kheer is a perfect festive dessert that combines nourishment with indulgent sweetness.

100g Makhana

500ml Milk

3-4 Saffron Strands

150ml Condensed Milk

2-3 tbsp Mixed Nuts (chopped)

1 tsp Dried Rose Petals (for garnish)

1 tbsp Pistachios (chopped, for garnish)
Directions
In a kadai, roast the Makhana on a low flame until crispy, and set aside.
Once they have cooled slightly, take half of the makhana and grind it into a fine powder.
Heat the milk on a low flame, add in the condensed milk, Makhana powder, rest of the roasted Makhana, Saffron strands, the chopped nuts, and mix well.
Cook until the mixture thickens, and allow it to boil for 1-2 minutes.
Remove from the flame, and ladle into a serving dish.
Garnish with the Pistachios and Rose Petals, and serve immediately.
