Mexican Burrito is a wholesome, flavour-packed meal that brings together vibrant ingredients in one satisfying wrap. Filled with seasoned black beans, sautéed vegetables, jalapeños, and sweet corn, it delivers a perfect balance of spice and freshness. The addition of shirataki rice keeps it light, while creamy avocado slices and rich cheese sauce add a smooth, indulgent touch. Wrapped in a soft tortilla and loaded with textures, this burrito is both hearty and delicious. Ideal for quick meals or casual dining, it offers a satisfying bite packed with bold Mexican-inspired flavours.

Mexican Burrito

Ingredients

  • 6-8 pcs Tortilla Wraps

  • 1 tin Black Beans (drained)

  • 1⁄2 of Red & Yellow Bell Peppers (chopped fine)

  • 2 pcs Red Onions (chopped fine)

  • 2 tbsp Chopped Garlic

  • 2 tbsp Cajun Seasoning

  • 2-3 Jalapenos (chopped)

  • 3 tbsp Sweet Corn

  • 200g Dried Shirataki Rice (re-hydrated)

  • 2 tbsp Cheese Sauce

  • 2 Avocados (sliced)

  • 100g Grated Cheese

Directions

  1. In a pan, heat some oil, and saute the onions and garlic for 2-3 minutes.

  2. Add in the bell peppers, jalapenos and corn, and mix well.

  3. Sprinkle the Cajun Seasoning over the mix and allow it to cook for another 3-4 minutes. Remove and set aside.

  4. To assemble the burrito, place the wrap on a chopping board, and layer the sauce, avocado slices, rice, black bean mixture, along with some grated cheese on top.

  5. Fold the sides of the wrap, and roll it shut.

  6. Wrap the roll tightly in parchment paper, and use a sharp knife to slice into halves.

  7. Serve, and enjoy!
