Mexican Tacos are a vibrant and satisfying dish that combines soft homemade corn tortillas with a flavourful, protein-rich filling. Seasoned tofu is paired with creamy sour cream, fresh avocado, crunchy cabbage, and a zesty tomato-onion salsa to create the perfect balance of textures and flavours. For the Tacos

250g Maize Flour

350ml Hot Water

1 tsp Salt
For the Filling

200g Tofu (crumbled)

2 tbsp Taco Seasoning

100g Sour Cream
-
2 nos Avocados (mashed lightly)

2 nos Red Onion (chopped)

1 Tomato (chopped)

1 tbsp Coriander (finely chopped)

1 tbsp Lemon Juice

1⁄4 pc Red Cabbage (shredded)

Coriander Leaves (for garnish)
Directions
In a large bowl, mix together the Maize flour, salt and hot water, until it forms a dough. Cover with a damp towel or tissue and set aside for 10-15 minutes.
For the Tofu filling, cook the tofu on low heat in a pan, with some oil.
Sprinkle in the Taco Seasoning and cook for another 3-4 minutes. Set aside to cool.
Once the dough has rested, portion it out into 40g rounds and roll out into flat discs between two pieces of parchment paper. Use a cookie cutter to cut the discs into even rounds.
Heat a pan on low heat, and cook the taco, until lightly golden on both sides.
Wrap the cooked tacos in a cloth and set aside.
In a small bowl, mix together the onion, tomato, coriander and lemon juice.
On a chopping board, lay out the tacos, spread the sour cream, and add a spoonful of the cooked tofu.
Add a dollop of the mashed avocado, and sprinkle the salsa.
Top with the shredded cabbage, and garnish with the coriander leaves.
Add a squeeze of lime, and serve immediately.
