Mexican Taquitos are crispy, flavour-packed rolls that make the perfect snack or party appetiser. Filled with a vibrant mix of beans, cheese, bell peppers, onions, and jalapeños, these taquitos offer a delicious balance of spice, crunch, and creamy texture. Seasoned with cayenne and cumin, the filling is bold and satisfying, while the tortillas turn golden and crisp when fried. Finished with a drizzle of avocado yogurt dressing and fresh tomato garnish, these taquitos are best served hot, delivering a mouthwatering bite that’s both comforting and full of zest.

Ingredients
10-12 Tortilla Wraps (cut to desired size)
2 Red Onions (finely chopped)
1 Red & Yellow Bell Pepper (finely chopped)
3 Jalapenos (finely chopped)
1 Tin Red Kidney Beans (strained)
50g Cheese (grated)
1 tbsp Cayenne Pepper
1 tsp Cumin Powder
Avocado Yogurt Dressing (for garnish)
1 Tomato (chopped fine, for garnish)
Oil for frying
Directions
In a large bowl, mix together all the ingredients till well combined.
Spoon the mixture onto the wraps, seal the edge with a mixture of flour and water
and roll it shut.Heat some oil in a pan on low to medium heat.
Place the rolls and fry till crispy and golden brown on all sides.
Place onto a platter, drizzle with the dressing, garnish, and serve immediately.
