Pecan Pie Bars are a rich, indulgent dessert that brings all the flavours of classic pecan pie in an easy-to-serve bar form. A buttery, crumbly shortbread crust forms the perfect base, topped with a gooey, caramel-like filling made with brown sugar, honey, and corn syrup. Studded generously with crunchy pecans and baked until beautifully set, these bars are decadent yet balanced. Once cooled and sliced, they make an ideal treat for festive occasions, dessert tables, or gifting—offering a satisfying mix of crisp crust, sticky filling, and nutty richness in every bite.
Ingredients
Shortbread Crust

240g Butter

150g Sugar

1 tbsp Vanilla Extract

560g Flour
For the Filling

250g Brown Sugar

4 tablespoons Butter
-
1⁄2 tsp Agar Agar

80g Honey
-
150g Light Corn Syrup

2 tsp Vanilla Extract

50g Cornstarch Slurry

21⁄2 cups Pecans
Directions
Line a glass dish with parchment paper and set aside.
Preheat the oven to 180C
In a mixing bowl, cream the butter and sugar together until the mixture is light and fluffy.
Mix in the vanilla extract until fully combined.
Gradually add the flour to the butter mixture. Mix until just combined, to avoid overworking the dough.
Press the dough into the pan. Use the back of a spoon or spatula to create an even layer, and refrigerate the crust for about 15-30 minutes before baking.
Bake the crust in the preheated oven for about 20-23 minutes, until lightly golden and no longer shiny on top. Do not bake until golden brown. Remove and keep aside until the filling is ready.
In a large bowl, cream the butter and sugar until the sugar is fully dissolved. Add all the other ingredients one by one, and mix with a spatula till well combined. Add the pecans and mix gently.
Pour the filling over the baked shortbread crust and bake for about 35 minutes.
Let it cool and set.
Once cooled, slice into bars, serve, and enjoy!
