Ingredients
Ingredients:
- 1/2 cup Butter
- 1/2 cup Dark Chocolate, chopped
- 1/4 cup Caster Sugar
- 3/4 cup Soy Milk
- 1 cup Rajgira (Amaranth) Flour
- 1/4 cup Cocoa Powder
- 1/4 cup Dark Chocolate Chunks (plus extra for topping)
- Sea Salt, for sprinkling
Equipment:
- Large mixing bowl
- Saucepan (for double-boiler)
- Spatula
- 8x8 inch baking dish
- Parchment paper
- Whisk
Directions
Preheat & Prep
Preheat your oven to 160°C (320°F). Line your baking dish with parchment paper, leaving some overhang to easily lift the brownies out later.
Melt Chocolate & Butter
Create a double-boiler by placing the large mixing bowl over a saucepan with a few inches of simmering water. Add the 1/2 cup of butter and 1/2 cup of chopped dark chocolate to the bowl. Stir occasionally until completely melted and smooth.
Add Wet Ingredients
Once melted, remove the bowl from the heat. Whisk in the 1/4 cup of caster sugar and 3/4 cup of soy milk until everything is well combined and glossy
Fold in Dry Ingredients:
Add the 1 cup of rajgira flour and 1/4 cup of cocoa powder to the wet mixture. Using a spatula, gently fold the dry ingredients in until the batter is smooth and there are no visible streaks of flour.
Add Chocolate Chunks:
Fold in the 1/4 cup of dark chocolate chunks.
Bake:
Transfer the batter to your prepared baking dish and spread it evenly with the spatula. Sprinkle some extra dark chocolate chunks on top. Bake in the preheated oven at 160°C for 40 minutes.
Cool & Finish:
Once baked, remove the brownies from the oven and immediately sprinkle a pinch of sea salt over the top. Allow them to cool completely in the baking dish.
Serve:
Once cooled, lift the brownies out of the dish using the parchment paper overhang. Transfer to a chopping board, slice into your desired size, and enjoy!
