Rajgira Brownies

Ingredients

    • 1/2 cup Butter
    • 1/2 cup Dark Chocolate, chopped
    • 1/4 cup Caster Sugar
    • 3/4 cup Soy Milk
    • 1 cup Rajgira (Amaranth) Flour
    • 1/4 cup Cocoa Powder
    • 1/4 cup Dark Chocolate Chunks (plus extra for topping)
    • Sea Salt, for sprinkling

    • Large mixing bowl
    • Saucepan (for double-boiler)
    • Spatula
    • 8x8 inch baking dish
    • Parchment paper
    • Whisk

    Directions

    1.  Preheat & Prep: Preheat your oven to 160°C (320°F). Line your baking dish with parchment paper, leaving some overhang to easily lift the brownies out later.

    2. Melt Chocolate & Butter: Create a double-boiler by placing the large mixing bowl over a saucepan with a few inches of simmering water. Add the 1/2 cup of butter and 1/2 cup of chopped dark chocolate to the bowl. Stir occasionally until completely melted and smooth.

    3. Add Wet Ingredients: Once melted, remove the bowl from the heat. Whisk in the 1/4 cup of caster sugar and 3/4 cup of soy milk until everything is well combined and glossy

    4. Fold in Dry Ingredients: Add the 1 cup of rajgira flour and 1/4 cup of cocoa powder to the wet mixture. Using a spatula, gently fold the dry ingredients in until the batter is smooth and there are no visible streaks of flour.

    5. Add Chocolate Chunks: Fold in the 1/4 cup of dark chocolate chunks.

    6. Bake: Transfer the batter to your prepared baking dish and spread it evenly with the spatula. Sprinkle some extra dark chocolate chunks on top. Bake in the preheated oven at 160°C for 40 minutes.

    7. Cool & Finish: Once baked, remove the brownies from the oven and immediately sprinkle a pinch of sea salt over the top. Allow them to cool completely in the baking dish.

    8. Serve: Once cooled, lift the brownies out of the dish using the parchment paper overhang. Transfer to a chopping board, slice into your desired size, and enjoy!
