Sabudana Khichdi is a beloved Indian comfort dish, especially enjoyed during fasting days and festive occasions. Made with soaked sabudana pearls, this light yet satisfying preparation is cooked with cumin seeds, curry leaves, green chillies, and tender potato cubes. Crushed peanuts add a delightful crunch and nutty flavour, while a touch of sugar balances the spices beautifully. Soft, fluffy, and aromatic, Sabudana Khichdi is quick to prepare and incredibly comforting. Ingredients

200g Sabudana Pearls

2-3 tbsp Oil

1 tsp Cumin seeds

2 Potatoes (cut into cubes)

100g Peanuts (roughly crushed)

3-4 Green Chillies (finely chopped)

5-7 Curry Leaves

1 tbsp Salt

1 tsp Sugar
Directions
Rinse the Sabudana Pearls 4-5 times in water, and set aside to soak in water for 1-2 hours.
Heat the oil in a kadai on a low flame, and sprinkle in the Cumin seeds.
Allow it to sputter, before adding in the curry leaves.
Add in the potato, green chillies, and crushed peanuts and cook for 3-5 minutes, before adding in the soaked Sabudana.
Gently mix until everything is well combined.
Remove from the flame, and serve hot in dish of choice.
