3-4 slices dried shiitake mushrooms

1 tsp mushroom broth powder

1 cup water

2 tbsp tahini

2 tsp Shiro miso

½ tsp Fysh sauce (Vegan Fish Sauce)

100g Ramen Noodles, Cooked according to package instructions.

Directions
Heat the oil in a saucepan over medium heat.
Sauté the minced garlic until fragrant, about 30 seconds.
add the sliced dried shiitake mushrooms and sauté for 1 min.
Pour in 1 Cup of water and add the mushroom broth powder.
Bring the mixture to bow, then reduce heat and simmer for 10 minutes.
In a separate bowl, combine the Tahini, Shiro miso, chili oil, tamari, fysh sauce, and a pinch of salt.
Mix thoroughly to form a smooth paste.
Strain the mushroom broth and slowly pour it into the flavor mix while stirring to fully combine.
Taste and adjust seasoning if necessary.
Pour the hot broth over the noodles.
Garnish with julienned carrots, spring onions, and sautéed tofu slices.
