Tiranga Matcha is a vibrant, refreshing beverage inspired by the colours of the Indian tricolour. It features an earthy matcha base sweetened with agave syrup, a smooth white layer of chilled oat milk, and a fragrant golden saffron milk topping. Ingredients

2 generous pinches of saffron threads
1 teaspoon granulated sugar
21 cup oat milk, cold

1 teaspoon matcha powder
1 tablespoon agave syrup (or to taste)
41 cup warm water (not boiling)

A handful of ice cubes

In a mortar and pestle, combine the 2 pinches of saffron and 1 teaspoon of sugar.
Crush them together until you have a fine, fragrant orange powder. The sugar acts as an abrasive to help break down the saffron
Transfer the powdered saffron-sugar mixture to a small jar. Pour in 21 cup of cold oat milk and stir vigorously until the color is evenly distributed. Set this saffron milk aside.

In your serving glass, add the 1 teaspoon of matcha powder, 1 tablespoon of agave syrup, and 41 cup of warm water.
Whisk vigorously (using a matcha whisk or a small milk frother) until the matcha is fully dissolved and there are no clumps. The mixture should be smooth and slightly frothy.

Fill the serving glass containing the matcha base with ice cubes, almost to the top. The ice is crucial for creating the layers.
Slowly pour the plain 21 cup of oat milk over the ice. Tip: Pouring it over the back of a spoon will help create a distinct white layer and prevent it from mixing with the green matcha.
Finally, gently and slowly pour the prepared saffron milk over the top of the white oat milk layer. It should float beautifully, completing the tricolor effect.
