Truffle Sabudana Khichdi is a luxurious twist on a classic Indian comfort dish, combining traditional flavours with a gourmet touch. Soft, fluffy sabudana pearls are cooked with cumin, green chillies, potatoes, and crunchy peanuts, creating a satisfying balance of texture and taste. The addition of aromatic truffle oil elevates the dish with a rich, earthy depth, making it feel indulgent yet familiar. Lightly seasoned with salt and a hint of sweetness, this khichdi is perfect for fasting days or special meals, offering a unique blend of simplicity and sophistication in every bite.

Truffle Sabudana Khichdi

Ingredients

  • 1 cup Sabudana (tapioca pearls)

  • 2 tbsp Truffle Oil

  • 1 tsp Cumin seeds

  • 2 Boiled Potato (cut into cubes)

  • 1⁄3 cup Crushed peanuts

  • 4 Green Chillies (finely chopped)

  • Few Curry leaves

  • 1 tbsp Salt

  • 1 tsp Sugar

  • Coriander leaves

Directions

  1. Rinse Sabudana in water. Soak sabudana in water for 3 hours.

  2. Drain the soaked sabudana, and set aside.

  3. Heat Oil in a kadhai, sputter cumin, curry leaves, green chillies, boiled potatoes
    and saute for 5 minutes.

  4. Add crushed peanuts, sabudana, salt, sugar and mix well.

  5. Keep stirring the sabudana, they will turn translucent once fully cooked.

  6. Garnish with coriander leaves, and serve hot.
