Truffle Sabudana Khichdi is a luxurious twist on a classic Indian comfort dish, combining traditional flavours with a gourmet touch. Ingredients

1 cup Sabudana (tapioca pearls)

2 tbsp Truffle Oil

1 tsp Cumin seeds

2 Boiled Potato (cut into cubes)

1⁄3 cup Crushed peanuts

4 Green Chillies (finely chopped)

Few Curry leaves

1 tbsp Salt

1 tsp Sugar

Coriander leaves
Directions
Rinse Sabudana in water. Soak sabudana in water for 3 hours.
Drain the soaked sabudana, and set aside.
Heat Oil in a kadhai, sputter cumin, curry leaves, green chillies, boiled potatoes
and saute for 5 minutes.Add crushed peanuts, sabudana, salt, sugar and mix well.
Keep stirring the sabudana, they will turn translucent once fully cooked.
Garnish with coriander leaves, and serve hot.
