Urban Platter Morels are edible and are considered a prized delicacy. They require very specific growing conditions that are not easily duplicated. Thus finding them has grown into a sport and a culture. Cooking morel mushrooms is easy when they're already dried. You just need to rehydrate them first. Your mileage may vary, but 3 oz of dried morels is equal to roughly a pound of fresh ones. Keep this in mind while dehydrating. You may want to cut your dried mushrooms before you rehydrate. They will rehydrate quicker in smaller pieces. It's up to you.
  • Fill a small bowl with lukewarm water and add your mushrooms. (I've seen recipes where people use stock or even half and half to rehydrate their mushrooms. I usually stick with just water).
  • Let them soak in the water. How long is variable, but at least 15 minutes. You want to let them soak until they're pliable, soft, and don't crack when you bend them. Just keep checking on them until they're soft.
  • Remove the dried morels from the water using a colander or sieve. Save the soaking water! If there's dirt and grit in it (which there probably will be at least a little), you can pour it through a coffee filter or sieve.
You may now commence cooking morel mushrooms! You can sauté or cook as you wish. As for the soaking water, if it's not of dirt it makes a great base for soups and sauces.

Why are Morels so Delicious?

Words can only go so far. As described above they are earthy and nutty, woodsy and toasted. The flavour is deep as opposed to strong and distinct without being weird. Their texture is meaty but in a tender way. Certainly a satisfying morsel of protein but not squishy or chewy. Morels don’t offend palettes or overpower dishes, and yet they stand above and apart. Every bite of a meal with morels is the best bite.

Are Morels Good for You?

Absolutely. Morels are loaded with all kinds of nourishment. As morels tend to grow in rich soils they come packed with vitamins and minerals. While the nutrition can vary based on the soil they are found in, morels will generally contain significant amounts of Iron, Copper, Manganese, Phosphorus, Zinc, Vitamin D, Folate, Niacin, Riboflavin and a decent dose of Potassium, Magnesium, Calcium, Selenium, Thiamine, Vitamins E and B6. Morels are also loaded with antioxidants, balance blood sugar, and repair liver-damage. Plus, they are high in protein and fibre.
