Gellan Gum is a pure high acyl gellan gum for use in stabilizing soy beverages or other non-dairy beverages. It offers an excellent suspension of cocoa and insoluble calcium ingredients, minimal contribution to mouthfeel viscosity, and compatibility with a wide range of beverages and fruit juices.
- Gellan Gum is a gelling agent developed specifically for applications where other gelling agents like agar agar and gelatin are not ideal.
- Gellan is well-known for its use in fluid gels and can also be used for spherification.
- Combine Gellan with blackberry puree, allow it to set, then blend to create a fluid gel. It is also used as the gelling agent, as an alternative to gelatin, in the manufacture of vegan varieties of "Gum" candies.
